  1. Rogan Josh: Northern cuisine

Variations:

  • Rogan gosh, commonly knows mutton curry. In northern part, the gravy is made with tomato puree and onion. Some parts, Eastern India, curd is used in the gravy.

Variations:

  • Chicken tikka curry is made with finely diced tomatoes & onion. In northern states, the flavor of this dish is enhanced by adding butter/clarified butter, where as in southern part, coconut milk or coconut is used in very small quantity. The nutrition value of all these variations vary because of the quantity of fat added to it.
  • The margination of chicken also varies based of its origin.

Variations:

  • Saag paneer,also known as palak paneer, is a delicacy of India. However, in northern part it is combined with chopped spinach and cottage cheese, whereas in western part, spinach puree is combined with tangy tomato puree and cottage cheese.
  • Sometimes, cottage cheese sautéed in oil and then mixed in spinach puree to add little crunch.
